The early days of wine for me were mystical. When I scraped together enough money to buy a new bottle of domestic Pinot or Zinfandel, it was a major event punctuated by invitations to friends, celebration and diligent note taking. Years later, it takes a lot more to get me that excited (unfortunately). One region that still grabs my attention, though, is Chateauneuf du Pape of the Southern Rhone. One of the finest wines I ever had was given to me by my father. I can still remember how intense earth-spice aromas jumped out of the glass followed by dark, tight fruits and bright acidity. Despite all the wine’s strengths, it was still about the spice. ECIPS (Eeesips) is my homage to spice.
